Making Mealtimes More Healthy: 3 Amazing Millet Dishes

Rich in vitamins and minerals, millets have been an integral part of the Indian diet for centuries. There are numerous types of millets eaten across India, so let us first take a look at some of the popular types before moving on to three amazing recipes using this nutrient-rich grain.

Three mealtime dishes using these millets: 


Bajra Aloo Parathas


For the Dough

  • Bajra flour - 1 cup
  • Pinch of salt
  • Ghee - for cooking
  • Bajra dry flour - for rolling

For the Stuffing:

  • 2 boiled potatoes – mashed well
  • Onion – 1 (finely chopped) 
  • Cumin powder - 1/2 teaspoon 
  • Red chilli powder  - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt to taste


  1. Add salt and knead the bajra flour (using hot water) into a soft dough ball and set aside 
  2. Mix together the ingredients for the stuffing
  3. Now make medium-sized balls of the dough and roll out into circles (around 4-5 inches in diameter) using some dry flour 
  4. Add a spoonful of the stuffing in the centre of the rolled dough
  5. Gather the edges together to form a ball (ensure it is sealed tight)
  6. Now roll it out gently and evenly on all sides
  7. Cook the paratha on a hot tava, using a bit of ghee till both sides turn golden brown
  8. Serve piping hot


Kangni Vegetable Biryani


  • Kangni – 1 cup (wash and soak in warm water an hour or so before cooking)
  • Water – 3 cups 
  • Oil or Ghee – for cooking 
  • Salt to taste 
  • Ginger garlic paste – 1 teaspoon 
  • Mint  leaves– few leaves coarsely chopped 
  • Onion – 2 (finely chopped) 
  • Green chillies – 2 (sliced lengthwise) 
  • Mix of vegetables (carrot, beans, green peas, potato) – 1 cup (chopped)
  • Cumin seeds – 1 teaspoon 
  • Cinnamon – 1-inch stick 
  • Bay leaf – 1 
  • Cloves – 4


  1. Heat oil in a pan
  1. Add the cumin seeds, cinnamon, bay leaf and cloves and sauté for a while
  1. Add in the chopped onions and chillies and sauté well
  1. Then add the ginger garlic paste and sauté till the raw smell disappears
  1. Now add the mixed vegetables and mint, sauté for a few minutes before pouring in the 3 cups of water
  1. When it comes to the boil, add the kangni (after draining it completely)
  1. Leave to cook till the water is completely absorbed 


Ragi Dosa


  • Ragi flour - 1 cup
  • Rice flour - ½ cup
  • Curd - ½ cup
  • Water - 1-2 cups (use as required)
  • Salt to taste
  • Ginger - 1 inch (finely chopped)
  • Green chilli - 1 (finely chopped)
  • Onion - 1 (finely chopped)
  • Oil – for cooking


  1. In a bowl mix together the ragi flour, rice flour, curd, salt, chopped ginger, green chilli and onion. Pour just enough water to form a batter of pouring consistency. Set aside for 20 - 30 minutes.
  1. Now mix the batter well and pour a ladleful of it onto a hot tava (similar to the process of making rava dosa). 
  1. Pour a little oil along the edges while cooking. When the edges turn crispy brown, flip over the dosa and let it continue to cook for a while before folding over and transferring to a plate.
